Vegetarian Pancit Canton

Today we’ll cook a perfect dish for Holy Week
it’s a healthy version of pancit
it’s called vegetarian pancit canton
here are the ingredients for this recipe
dried shitake mushroom
“repolyo” or cabbage
snap peas
carrots, sliced into strips
chopped parsley
celery stalk, chopped
onion
garlic
pancit canton
aside from these ingredients, we will also use vegetarian oyster sauce, soy sauce, water, cooking oil and ground black pepper
here’s the complete list of ingredients with measurements
are you ready? This is very easy so let’s start!
let’s prepare first the dried shitake mushroom
it’s dry that’s why we need to soak it in water first
pour lukewarm water
then soak it for 15 minutes or until it’s soft
because dried mushroom is hard and difficult to slice
while soaking the mushroom, let’s cook the vegetables
we’ll stir fry the vegetables, we’ll lightly cook it
in a preheat cooking pot, add the snap peas right away
we can also use “sitsaro” or snow peas
add cabbage
stir fry for 30 seconds before we add the carrots
let’s continue to stir fry
we’re just cooking lightly the vegetables, we’ll remove this later. Stir fry for 1 – 1.5 minutes then we’ll transfer to a clean plate. We’ll put it back once the pancit canton is almost done cooking
the mushroom is ready. It’s soft and ready to slice
if you want to make the softening of mushroom faster, put the soaked mushroom in a microwave for 1 minute
we can slice it into 2 pieces or more
the mushroom is soft that’s why I can slice it with less effort
you can slice the mushroom any way you want, you may even chop it
repeat the steps with the rest of the mushrooms
don’t discard the water, we’ll use that later
after the mushroom is the pancit canton (vegetarian)
preheat pot with cooking oil (the pot we used earlier) and add onion
cook for 20-25 sec then add the garlic
this is crushed garlic, you may mince it if you want
then add chopped celery stalk
continue cooking until onion is soft
cook for 1-1.5 min
here goes the soft shitake mushroom
this helps to give strong flavor, strong flavor in a good way, the taste is nice
it has a good strong aroma too, which makes it appetizing. It doesn’t smell bad
we’ll stir fry the shitake mushroom because it gives a distinct flavor
this makes our pancit taste better
stir fry for 2 minutes then it’s ready
here goes the vegetarian oyster sauce. Our recipe is vegetarian so we’ll use a vegetarian oyster sauce
this type of oyster sauce is made from mushroom
stir fry for 30 sec
then add the “toyo” or soy sauce
then add the soaked water
this water was used in soaking the shitake mushroom so it contains flavor of the shitake
mix
after mixing, simmer it. So we can extract more flavor from the mushroom
cover the pot and cook for 10 minutes in medium heat
after 10 minutes, you’ll notice that the mushroom is totally soft
and if you taste it at this point, the sauce is really flavorful
mix then let’s add another ingredient that gives flavor to our dish
this is the chopped parsley
parsley is not just for garnishing. It also gives flavor to our dish
mix
after mixing, add the pancit canton or flour sticks right away
I divided the flour sticks into 2 so it can fit in the pot
we’re using 250 grams only
after adding the pancit, cover the pot
so it can trap the steam and the pancit can absorb the steam which makes it soft
in 2 minutes, it’s already soft, see? It’s now easy to toss
then let’s toss
make sure the pancit is covered with sauce
our aim here is to let the pancit absorb the sauce so later it’ll be delicious
cover the pot
continue cooking and let the pancit absorb the remaining liquid. For 3 minutes in low heat
after 3 minutes, the pancit is ready
it’s cooked and flavorful for sure
but there’s one more ingredient
the cooking process is almost done so don’t forget the stir fried vegetables
here’s the partially cooked vegetables
let’s toss
make sure it’s evenly distributed
what’s good about it is it’s still crispy and fresh
it’s important if the vegetables are still fresh
not over cooked
so it’s still crispy when we eat it
here goes the ground black pepper, this is our seasoning
it’s up to you how much ground black pepper you want to add. For me, it’s good for my pancit to have more
after seasoning, toss for the last time
and then transfer to a serving plate and serve

Earlier, I smelled the shitake mushroom. It has a strong aroma in a good way
so it really helps to make our dish appetizing

while chewing it,
you can already taste the shitake mushroom. And chewing it longer, will make it more flavorful
the technique here is: when you take a shitake mushroom, take some … excuse me, take some pancit with it so you can balance out the flavor of the shitake mushroom with the pancit
it’s really good. Let’s have some vegetables

it’s so delicious. I think I want to chew it again and again
the delicious shitake mushroom flavor stays in my mouth
it’s called vegetarian pancit, obviously because the ingredients are all vegetables and the oyster sauce is also vegetarian
a vegetarian oyster sauce is usually made from shitake mushroom or oyster mushroom
make sure the oyster sauce is vegetarian. We can also call it vegan
vegan means no animal by-product used. We didn’t use any animal by-product
not even one ingredient. So if I’m right, we can call this Vegan Pancit

the vegetables are still crispy
what’s good about the vegetable is it’s half cooked before hand
we stir fried it but partial cooking only. We added it again when we’re almost done
that’s why we can really notice its freshness once it’s served
the pancit is really delicious
different components with different textures
its combination really works for me
mmm~
I can’t help but eat the shitake mushroom, it’s really yummy
