Ragda Patties Recipe | How To Make Ragda Patties | Mumbai Street Food


ragda patties is a popular street food of Mumbai. potato patties are topped with white chickpeas curry and a variety of chutneys and other ingredients
we will make ragda first and here are ingredients needed. the quantities are listed in the description box
oil
dry white peas/vatana. these have been soaked in water for 7-8 hours and then the water has been drained out
chopped onions
pureed tomatoes
ginger paste and chopped green chili
cumin seeds
garam masala
coriander powder
salt
red chili powder
turmeric powder
we will boil the white peas first
put the soaked peas in a pressure cooker along with 600 ml water and 1/2 tsp salt
keep the heat on high and close the cooker
at the first whistle reduce heat to low and boil the peas for 8-10 minutes
after 8 minutes put off the heat. open the cooker when the pressure subsides
the peas have softened
strain out the peas and save the water
we will prepare the ragda now
put 2 tbsp oil in a pan and heat it
once the oil is hot add the chopped onions and saute till they turn light pink. keep heat on medium
then add the ginger paste and chopped green chili
saute for a minute
then reduce heat to low and add the coriander powder, turmeric powder, red chili powder, garam masala & jeera. we will add salt later if needed. Saute for 30 seconds
now raise heat to medium and add the tomato puree. Mix well and saute for 1-2 minutes
add the boiled vatana and mix well.
stir cook the vatana for 3-4 minutes on low heat then check salt. we have added 1/2 tsp salt
add the saved water only as much as needed since we need a thick gravy
keep the heat on high and let the gravy come to a boil
the gravy is boiling now. reduce heat to low and cook till the water and peas combine
vary the heat as needed
the ragda is ready after 10 minutes of cooking. all the saved water was used in cooking the ragda adding it in whenever needed
put off the heat and this is the consistency of the ragda we need. transfer to a bowl
now we will make the patties and these are the ingredients needed to prepare them
boiled and mashed potatoes
salt
red chili powder
garam masala
coriander powder
4-5 tsp chopped hara dhania/cilantro
cornflour
lower amounts of spices have been used to make the patties mixture as the chutneys we will use later have these in a substantial amount
to the mashed potatoes add all the spices, salt, cornflour and half of the cilantro and mix well
the patty mixture is ready. grease the hands with a little oil and shape it into patties
we made 6 patties
we will shallow fry the patties now
add oil in a pan as needed. heat it on medium heat and fry the patties till they turn crisp and a nice golden color on both sides.
keep turning them over at regular intervals till done
the patties are done and the ragda too is ready. we will assemble the ragda patties now
arrange the patties in a dish
pour the ragda over them
spread some whisked yogurt
sweet tamarind chutney
mint chutney
chopped onions
chopped tomatoes
sev
and some chopped cilantro
ragda patties is ready for serving
