Hi! So I'm about to put the bread in the oven just now, however, I noticed that the video says to bake for 30 minutes whereas the recipe instructs to cook for 40 minutes. Which one should I do?
Also, while proofing the bread for the third time, The dough rose well above the height of the mold. Should I punch it down to put the lid on? Some help would be appreciated!
UPDATE: I baked the bread for 35 minutes, however I do feel 40 minutes would have been best. For the proofed dough, I did gently punch down the dough, about 1 cm below the top of the tin and worked like magic.
The bread came out BRILLIANT. I totally understand what the tasters meant about subtle flavors as the bread was both less salty and sweet compared to storebought, but the texture was perfect nonetheless. Will probably keep coming back to this recipe for a long while. Thank you, Rie!

I have to say that Rie is one of my favorite chefs! I love learning how other countries do a simple sandwich like egg salad! Decades ago, I learned how to make a perfect American egg salad. Over the years my sons and their friends swore that my egg salad was the best! I swore them all to secrecy, but my sons carried extra egg salad and crackers to share with friends for all their years in school.

i've always liked a really vinegar-y egg salad, with red onion for a crunchy texture. but i do really like the idea of using more yolk than white, i always just shred my eggs through a cooling rack and use the whole thing.

For real tho, the 7/11 stores in Asia are way better than American ones. I'm in Korea, and the 7/11's have different sandwiches, bento boxes with katsu or noodles, bibimbap, salads, noodles, kimbaps, and so much more all for around 4 or 5 USD

As an American, I'll go for the homemade egg salad sandwich over 7-11's because one, mass produced and cold packaged sandwiches are DISGUSTING, and two, homemade is always better because the ingredients are controlled for small batches. The only commercially produced product I like is Keogh's crisps from Ireland. Every single bag says what field the potatoes were grown in, the variety of potato it is, and who cooked that specific small batch.
I would love to make this. This is going on my todo list. My mother taught me her way of making egg salad sandwiches (eggs, mayo, salt / pepper, and a little pinch of season-all) when I was younger. My mom always said as long as you have eggs you'll always have a meal.
