I am cooking in a pressure cooker just to speed up the procedure.
Normally, vegetables are cooked at medium-low heat in steam to maintain their nutrients and flavors.
Add oil in a pan, heat up and add sliced onions
Fry until onion slices turn into golden brown
Add tomato slices and fry a little
Now add salt, red chillie, turmeric, and coriander powders
Fry until tomatoes soften and all flavors merge together
Add Brinjal/Eggplant and potatoes slices. Mix well
Also, add green chillies and 1/2 cup water
Mix them all and let it cook for 5 minutes
When potatoes are cooked, check the consistency of gravy
Add lemon juice at this stage but it is optional.
The gravy should be runny to serve with boiled rice
For Naan and Chapati, you need to evaporate excess water and wait until oil comes out of the sides of the pan
