溏心蛋/Marinated Soft Boiled Egg/味付け玉子 | The Sound Of Food


soy sauce marinade
water 250~300ml, soy sauce 3~4Tsp, sugar 4tsp
rice wine(or shaoxing wine) ,ginger ,garlic
bring the soy sauce marinade to boiled
stir
turn off the heat and set aside
use thumbtack to stab a small hole on the bottom of egg ( or both side )
CO₂ will comes out from the hole ,the egg become easier to peel.
add 1 tsp of vinegar in boiled water ,and gently put egg in
cook for 7 mins (or 6~7.5min , depends on the size or what kind of egg yolk do you like)
gently stir the egg
and put eggs in ice water ( with ice cube )
carefully peel the egg
egg yolk is soft !
pure the soy sauce marinade (cold)
put in the fridge for 3 days , remember to turn over ,make sure it all marinated
The third day !
cut eggs with a thread
enjoy !
