Today I am here with an easy starter, Kurkure ladysfingers.
Its a starter that kids will also love. My kids dont like ladysfinger much. But they eat it when its made like this

Yesterday I had shown cauliflower masala curry. I am showing these because its fasting season for many
They are all vegetarian dishes. Dont forget to check them out. First lets wash the ladysfinger.
After that wipe all the ladysfinger with a cloth or tissue paper.
Lets cut the ladysfinger now. I had shown it in detail in the ladysfinger stir fry video.
Not making you bored now. You can check that video if you haved
Cut the top and bottom of it first. Cut the ladysfinger to half. This helps us to see if any worms are there.
When making this crispy dish, we dont need the middle seeds part. You can peel it out with a knife.
You will get the middle white part along with the seeds. This part gets burnt fast when frying.
Moreover thats where the richness lies. It will be sticky too. Thats why we discard the middle part.
Now slice it once again. So a ladysfinger is sliced to 4 slits. Lets do the same to all the ladysfingers.
Then cut it like this. Let me cut all the ladysfinger the same way and come.
I have cut all of them the same way. You can even cut the to 6 slices if you want. I cut 1 to 4 slices
Lets marinate this. For that we need chilli powder etc. Add 1/2tsp chilli pdr to a bowl.
Add 1/2tsp cumin seeds pdr, add either garam masala or chat masala pdr. I dont have chat masala with me.
I am adding 1/4tsp garam masala now. Chat masala is the best for this. 3tbsp besan flour.
2tbsp rice flour. Next we need dry mango pdr.
I dont have it with me now. So I shall add some lemon juice. A small sourness is a must here.
If you have mango pdr, add 1/2 tsp of it or add lemon juice like me. Add salt as required.
Now taste the flour mix and see if its ok. Add the ladysfinger to it
Add 2tsp lemon juice and mix well. I added 1/4tsp more of chilli pdr. I felt it was less.
So I used total 3/4th tsp of chilli pdr. Lets close and keep this aside for 20mts. It absorbs the masala well.
If you fry it soon, the masalas wont be coated on it. Now after 20mts its well coated and absorbed.
Now the water has come out and masala is well coated. I tasted one and the salt, spice and sourness is perfect
You can also taste and add anything if needed. I had forgotten to add turmeric pdr.
Now lets begin to fry this. Heat a kadayi and pour some oil to it.
When it becomes hot, add little by little and fry on medium flame.
I ate this for the 1st time when we went to a friends house long back when I came to Dubai.
Usually theres nothing special for Vegetarians. But when I had this I liked it and even Avi too.
I make this often. I like the masala version of this. too. Its like frying brinjals.
I shall show that one day. This is a nice snack item. You can have it crispy. Lets fry it well on medium flame.
It will look soft. Nothing to worry. It will become crispy after some time.
This takes time to become crispy. It should be done with patience.
You can hear the crispness now.
It becomes more crispy when its left out. Lets remove this from the oil now.
Transfer this to a kitchen tissue or strainer. Lets fry the rest also in the same oil.
Our second batch is also ready. I tasted one from the 1st batch. I felt spice level is a bit less. Its perfect for kids.
Sourness is also correct with 2tsp lemon juice. If you feel its less, add dry mango powder.
I am adding little chilli pdr at the end. Not adding salt. Our crispy crunchy kurkure bindi is ready.
Add little chilli pdr to it now. If you want you can add chat masala or garam masala now.
Mix all these well now. Our easy peasy tasty ladysfinger is ready.
All of you try it out. Its awesome. Everything is perfect. The lastly added chilli pdr is awesome.
